Grilled Chicken Kabobs

Ingredients

 4 boneless skinless chicken breasts
 1 large green bell pepper
 1 onion, cut into wedges
 1 large red bell pepper
 1 cup bbq sauce
  skewers







Directions

Preheat grill. Cut peppers, pineapple, chicken and onion into chunks.  Season chicken with salt and pepper(or use your favorite chicken seasoning.  Prepare kabobs by threading peppers, chicken, pineapple, and onions on skewers.  Lightly oil grill and place kabobs on grill. Cook, turning and brushing with BBQ sauce frequently until juices run clear.






Oven Baked Fried Chicken



Ingredients

2 cups well shaken buttermilk
4 large garlic cloves, peeled and   lightly  crushed
3 tablespoons hot sauce
1 tablespoon salt
2 teaspoons finely ground black pepper
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
boneless skinless chicken breasts(or   any chicken pieces of choice)
1 1/4 cups cornflake crumbs
4 tablespoons unsalted melted butter



Directions

Combine buttermilk, garlic, hot sauce, salt, pepper, paprika and cayenne in a large bowl and stir until evenly combined.  Rinse chicken and pat dry with paper towels, then transfer to 13"x9" baking dish.  Pour buttermilk mixture over chicken, cover, refrigerate overnight.  Preheat to 400 degrees and arrange rack in middle.  Place a metal cooking rack on a baking sheet and set aside.  Place corn flake crumbs in a shallow dish, and season with salt and freshly ground black pepper.  Remove chicken from buttermilk mixture, letting excess drip off, and place in corn flake crumbs, turning to coat completely.  Transfer to rack lined baking sheet and repeat with remaining chicken.  Drizzle melted mutter over chicken pieces.  Bake until golden and crispy and internal temperature is 160 degrees.
